Ingredients

  • Rhubarb syrup:

    30 ml

  • Gin:

    45 ml

  • Lemon juice:

    15 ml

  • Champagne or sparkling wine:

    Top up

  • Ice:

    As needed

  • Twist of lemon peel or Rhubarb stalk:

    For garnish

Instructions

  1. 1. Create the Rhubarb syrup by simmering pieces of fresh rhubarb with sugar and water until fully extracted.
  2. 2. Mix the Rhubarb syrup, gin, and lemon juice in a shaker.
  3. 3. Add ice to the shaker and shake to chill the mixture.
  4. 4. Strain the mixture into a flute glass.
  5. 5. Top up with chilled champagne or sparkling wine.
  6. 6. Garnish with a twist of lemon peel or a small stalk of rhubarb.
