Rhubarb syrup:

Gin:
45 ml
Lemon juice:

Champagne or sparkling wine:

Twist of lemon peel or Rhubarb stalk:

Instructions
- 1. Create the Rhubarb syrup by simmering pieces of fresh rhubarb with sugar and water until fully extracted.
- 2. Mix the Rhubarb syrup, gin, and lemon juice in a shaker.
- 3. Add ice to the shaker and shake to chill the mixture.
- 4. Strain the mixture into a flute glass.
- 5. Top up with chilled champagne or sparkling wine.
- 6. Garnish with a twist of lemon peel or a small stalk of rhubarb.
